These sardines, Sardina Pilchardus Walbaum, are caught off the coast of Brittany between June and November, during the high season, for a fat content that guarantees a tender, soft and full of flavor flesh. They are fresh and carefully selected from small local fishing: Saint Guénolé, Penmarch…. The heading and nesting are done, the old fashioned way, by hand.
